Squash blossoms are covering my yard this year so I finally decided to try my hand at the very "Italian" treat - fried squash blossoms. There's lots of recipes on the internet. I loved the light batter that used seltzer - not water . Stuffed with goat cheese and homemade pesto - these were irrisistable!
